Rice with octopus and artichokes

Ingredients

  • 25 gr of Onion
  • 25 gr of Green pepper
  • 4 Artichokes
  • 200 gr of Octopus including leg and head
  • 1 Fried ñora
  • 1 Clove of garlic
  • 4 Strands of saffron
  • 1/2 Liter of Fish stock
  • 280 gr of bomba rice
  • 200 ml of olive oil
  • 150 gr of grated natural tomato
  • Salt to taste

Preparation

Sauté the chopped octopus over high heat for a few minutes until it turns golden, then set it aside. Next, cook the onion and pepper together until soft, then add the cleaned and quartered artichokes, followed by finely chopped garlic.

When it starts to smell, add the tomato, and the chopped fried ñora, sauté it well. Add the octopus, and saffron strands, and moisten with the fish stock.

Let it cook for 20 minutes, add salt, and then add the rice to cook slowly for 15 more minutes.
