Rice with baby squid and green garlic

Ingredients

  • 320 g of Rice
  • 75 ml of Extra Virgin Olive Oil
  • 500 g of Fresh Baby Squid
  • 2 Cloves of Garlic
  • 30 g of Salmorreta (Garlic, fried tomato and ñora pepper)
  • A bunch of green garlic
  • 2 L of Fish Stock or Fumet previously prepared

Preparation

Place a paella pan on the heat with extra virgin olive oil. When the oil is hot, sauté the baby squid. Add the peeled and chopped tender green garlic. Sauté everything together.

Remove the baby squid and green garlic, and set aside. Fry the finely chopped garlic cloves until golden. Add the rice and sauté for a couple of minutes. Add the Salmorreta, mixing it with the rice for about a minute. Incorporate the green garlic and the baby squid. Mix everything and start adding the boiling stock. Adjust the salt.

Cook for 10 minutes over high heat, stirring occasionally. Lower the heat and cook for 8 more minutes. Let it rest for a few minutes and serve
