Pumpkin fritters

Traditional All Saints' Day recipe.

Ingredients

  • 500 g of pumpkin
  • 1 kg of flour
  • 50 g of fresh baker’s yeast
  • 2 eggs
  • 400 g of sugar
  • Sunflower oil

Preparation

  1. Boil the pumpkin until its texture is suitable for making a puree. Let it cool and reserve the leftover water for later.
  2. Add the eggs, yeast, and sugar to the pumpkin and knead or blend with a mixer.
  3. Add the flour and cooking water to the mixture and mix until you get a solid dough. Let the dough rest for 2 hours in a warm place until it triples in volume.
  4. Heat the sunflower oil in a deep frying pan and, using your hands or a mold, shape the fritters that we will fry when the oil is very hot.
  5. Let the fritters cool.

About this recipe

It is advisable to dip your hands in oil from time to time so that the dough does not stick to your hands when shaping the fritters. Once fried they can be spread with sugar or honey and can be served with coffee or chocolate.
